large yellow croakers Feast

Curled-up Dragon Yellow Croaker

 

Raw Materials:

Large yellow croaker, soaked sea cucumber, fresh shelled shrimp, winter bamboo shoot, green pea, cooked lean ham, spiced vinegar, white sugar, refined salt, soy sauce, yellow wine, gourmet powder, scallion, ginger, garlic, egg, starch, flour, water starch, peanut oil, sesame oil

Preparation Methods:

A.     Clean a croaker, scrap meat off bones and fishbone, separate the tail, and connect the head and the tail. Score diamond patterns on two surfaces of the croaker with a knife, put the croaker into a plate, put a little refined salt, gourmet powder and yellow wine, and salt slightly;

B.      Chop ingredients into diamond blocks, add two broken eggs into a pot, starch and flour, stir to obtain heavy paste, and make the croaker surface full of the heavy paste for later frying. Blend the ingredients and a little water to obtain juice

C.      Put a pan over intense fire, pour oil, heat to medium, lift up the fishtail with a hand and put the fish head into the pan along the side of the pan first, turn the fish over for deep frying, put the fried fish in a plate, and make the fish head towards one end at which the head of a curled-up dragon is engraved;

D.     Pour oil into the pan, heat and fry the scallion, the ginger and the garlic, pour bowl juice into the pan, keep frying the juice until the juice looks like rice soup and pour the juice on the croaker;

Finished Product Characteristics: It looks like a curled-up dragon. It has bright color and luster and is crisp, sweet and sour.

 

 

The story: According to legend, in the Three Kingdoms period, Governor Zhou Yu in the Wu Kingdom was desperate to kill Liu Bei and take up the Shu Kingdom. One day he had an ingenious idea and came up with a honey trap: to have Sun Quan's sister married Liu Bei to trick Liu Bei to Wu Kingdom for seeing his future wife and then they would wait for the chance of killing him. Sun Quan’s mother did not know about trick of Zhou Yu and happily agreed to this marriage, and allow his daughter Lady Sun Shangxiang to marry Liu Bei san phrase. After the marriage, Liu Bei was prisoned in the palace all day by the Wu solders, so he was anxious and depressed. Lady Shang Xiang fell in love with Liu Bei at first sight. She took care of him in every possible way, and often cooked for her husband. Once she made a dish, called "Beaulieu yellow croaker” and asked Liu Bei to taste it. Liu Bei tasted it and found it really good. Ms. Sun asked gently, “darling, cannot you taste something special from the food?” Liu Bei puzzled and asked Zhao Yun sitting beside him. Zhao said quickly, “the yellow croaker is dragon; dragon symbolizes lord; your wife made this dish in person. She did not simply want you to taste the delicious food who may do good your health; more importantly, she wanted to appease you, and wanted you to stay in Wu Kingdom for the time being for the sake of your kingdom, yourself and your wife. Ms. Sun nodded to agree with Zhao after hearing his comments, and said, “Although Wu Kingdom is not the long-term place for you for the time being, but you have to be patient for the sake of your kingdom and me. It’s just like a dragon lying here, waiting for the chance and making great new plans.” Liu Bei followed his wife's advice and settled down in Wu Kingdom. 

Yellow croaker in soap: (it is the signature dish in the Qing Dynasty. The yellow croaker in soap surely is made of luxurious materials using tedious skills. Today, even in Beijing where the royal palace foods are inherited and carried forward, the chances of eating it is also rare. It is also due to this reason that the folk legend about it is marvelous. Chef Zhao Guangyou from Jianyi Mansion told us that there are three difficulties to make this dish: first, whole-fish bone removal, secondly, the making of soup, and thirdly, the making of soup and the frying.

  As we all know, the most amazing and precious part of yellow croaker in soup is that it holds water inside without leaking one drop of it. Therefore, the technique of taking off the fish bone without cutting open the belly has become the fundamental secret. The trick lies in the gills at the mouth of the fish. Cut a small hole here and remove the stuff from the belly, and then follow the routine steps of washing and eliminating the fishy smell, pour in the soup and then seal the hole for firing. In addition to the super difficult culinary skills, the fresh and delicious taste is also another factor that pushes it to the top rank of famous dishes. The soup is made of eight sea food ingredients, such as, dried scallops, bird's nest, shark's fin, skirts, abalone, sea cucumbers and other valuable materials sea plus chicken broth. The finished soup looks as clear as tea, and you can see the pattern on the bottom of the soup bowl through it; however, the taste was delicious and mellow. Diced mushrooms are simmered in the soup and poured into the belly of the fish together with the soup, and then seal the opened part for frying. When being served, all the soup is sealed inside the fish. Take up a piece of tender white fish with chopsticks, you will see that the soup in the belly flow out in heat and fragrant smell. The delicacy blending both movement and tranquility looks just like a splash-ink landscape painting glowing in the misty light. The fun of the elegant and exquisite Chinese-style cuisines is fully demonstrated in such a gurgling flow.

 

 

Dry Stir-fried Yellow Croaker

 

 

 

Raw Materials: Small yellow croaker, ginger, scallion, garlic, fresh color pepper, garlic stem, caraway, essence of chicken, starch, cooking wine, light soy sauce, bean paste

Preparation Methods:

1.       Clean a yellow croaker and salt with a pinch of salt for later use;

2.       Chop ginger, garlic and color pepper for later use;

3.       Cut garlic stems into inclined sections, shred scallion, and clean a little caraway for later use;

4.       Scatter a little starch on the salted croaker;

5.       Pour oil into a pot and fry the small yellow croaker with a little dry starch until the two surfaces of the croaker become golden yellow;

6.       Pour oil into the other pot and stir-fry the ginger, the garlic and color pepper;

7.       Add bean paste and stir-fry until red oil emerges, and put into the garlic stems, and slightly fry;

8.       Put the fried small yellow croaker, add an appropriate amount of clear water, pour cooking wine and light soy sauce, scatter essence of chicken, stew slightly for three to five minutes, put the croaker into the dry pot, and add the caraway and scallion silks

 

 

 

Potherb Mustard Croaker Soup

 

 

Materials

Yellow croaker, potherb mustard, cooking wine, essence of chicken, salt, scallion, ginger

Preparation Methods

1.       Split a yellow croaker, cleaning, scratch for several times on the two sides of the fish body, and chop potherb mustard;

2.       Heat an oil pot, and fry the croaker until the two surfaces of the croaker become golden yellow;

3.       Pour cooking wine, add clear water, boil over intense fire, cover and braise over slow fire for 10 minutes;

4.       Add to the potherb mustard, salt, essence of chicken and scallion sections when the soup is oyster white and boil over intense fire

 

 

 

Braised Croaker

 

 

Materials

Yellow croaker, salt, scallion, ginger, garlic, millet wine, sugar, soy sauce and oil

Preparation Method

1.       Dry a croaker, put salt, scallion, ginger and garlic into an oil pot first and put the croaker into the oil pot for frying;

2.       Pour millet wine, sugar, soy sauce and a little water (the surface of water is not needed to surpass the croaker and the croaker is needed to be turned over in the process of cooking) for cooking, and when a little water is left, obtain the dish.
